Lemon & Turmeric Quinoa Salad

Ingredients:

1 cup of Quinoa 

1 teaspoon coconut oil

1/2 a lemon or 1 tablespoon lemon juice, 

1 1/2 teaspoons turmeric powder

1/4 teaspoon of salt

1 cup or handful of Kale

1/2 a spanish onion (chopped)

1/2 a tomato (chopped)

1/4 cup of sunflower seeds 


Method:

1. Boil quinoa for 10 - 15 minutes.

2. Add Lemon, Coconut oil and turmeric to the quinoa and stir for 1 minute.

3. Add to a bowl and prepare your salad, kale, chopped onion and tomato on the side

4. Sprinkle Sunflower seeds.

5. Drizzle some organic cold pressed olive oil, salt and pepper to taste.
